Mmmm green peppers stuffed with a chicken tomato mix! You can literally stuff your bell peppers with anything which is why I love them. You can be creative and switch up the ingredients when you get bored of eating the same thing.
1. Cut your green pepper in half and hollow out all the seeds. Cover the outside and inside of the pepper in olive oil and basil. Layer the inside of the pepper with feta cheese and bake it in the oven for around 7 minutes.
2. In the meantime, cut up your tomato’s, already cooked chicken, garlic, and onion. In a sauce pan with olive oil, put in the ingredients. When it looks about ready, add black pepper.
3. Take out your green pepper and stuff your chicken veggie mix into them. Top it off with feta cheese and basil.
