The perfect combo after lunch snack that’s healthy and tastes amazing to satisfy your dessert cravings. To start off this full recipe, I will start off with the Banana Bread Recipe then ending with the Chia Seed Yogurt Parfait.
Banana Bread Cupcakes
This makes 2 large cupcake sized banana breads, you can double the portion size by doubling the ingredients.
2 ripe banana
1/2 cup oat flour
3 pieces from a chocolate bar
2 spoons of brown sugar
1/2 tsp baking powder
1) Mash the two bananas in a bowl with a fork. Add in your two spoons of brown sugar and stir that in together.
2) crack in your egg, and add in both the oat flour and baking powder into the mixture. Give everything a good mix.
3) pour everything into your cupcake sized tins and pop them in the oven for 20 minutes at about 400 degrees on bake.
Blue Berry Chia Seed Yogurt Parfait
While your waiting for your banana breads to rise, why not make a blueberry vanilla yogurt parfait topped with mint?

Wash a cup of fresh blue berries. After there washed, put them in a blender with a bit of water to puree. Once thats finished, pour the mixture into a bowl with chia seeds (note: the more chia seeds you put, the thicker the consistency will get). Give the blue berry puree a good mix with a spoon once your chia seeds are in and put it in the fridge to chill for 10 minutes. I accidently put in a bit too much chia seeds in so when I toke out my puree, it looked a bit like a thick pudding/jello. BUT don’t even sweat it if this happens to you, just add in some almond milk, give it another good mix, and put it back in the fridge.
Once your satisfied with your blue berry chia yogurt, you can start layering your parfait with whatever you want. I used vanilla yogurt as my second layer! Finally I topped it off with some mint leaves and a couple more blue berries as my finished side dessert with my banana bread (which should be about finished when you finish making this parfait) perfect timing :p
