Today I put together a post on how I’ve been making my breakfast these last couple days. If you’re looking for simple and easy recipes you can try out that taste amazing and takes little to no time, here are five breakfast recipes I put together to try out!
1) Salmon Tzatziki Croissant
Heat your croissant in the oven for about a minute an half. While your croissant is being warmed up, make your tzatziki sauce by adding about two spoons of greek yogurt in a bowl, add a tablespoon of dill, 1 garlic clove minced, and pepper. Mix that all up and once your croissant is ready, layer in the smoked salmon, top it off with tzatziki sauce, and add in some slices of Avocado!
2) Breakfast Flatbread

Toast your flatbread. Meanwhile in a saucepan with oil, make your egg however you like them (over easy, sunny side up etc). In another saucepan with oil, put in your spinach and cut onions. Add in some black pepper for some flavour. Once the toast is ready, put some cut up cheese on and top it off with your spinach and onion then your egg.
3) Mock Acai Bowl
Cut your banana in half and add that in the blender along side half a cup of frozen berries. Add in a tablespoon of flax seeds and matcha powder. And lastly roughly about a little less then a half cup of almond milk. If you want your smoothie to be thicker more similar to a Acai Bowl, put less almond milk. Blend everything together and pour it in your breakfast bowl. Top off with granola and chia seeds.
4) Classic Avocado and Toast

+ Coffee on the side (duh!)
Toast your bread of choice. And if your tired of using the same old white toast, try using different types such as cheese breads or gluten free or even baguette! While your bread is being heated, cook your egg the way you like it. I did mine sunny side up 🙂 Throw on a couple of slices of Avo on your bread once it’s ready, top it off with pepper, and enjoy your breakfast with a side of strong coffee.
5) Zucchini Tomato Brunch Sandwich
Cut four slices of zucchini so that you have the top and bottom of your ‘sandwich’. In a sauce pan with olive oil, grill the zucchini on medium heat. Coat the top of your zucchini with olive oil and basil then flip them to make sure that both sides are covered with olive oil and basil. While the zucchini is on the sauce pan, chop your onion and cut up slices of cheese and tomato. Put some black pepper onto the top of your zucchini and place the slices of cheese on top. Once the cheese has melted, remove the zucchini off the pan and onto a plate. Put your tomato slices, salmon, and onion on top of two slices of zucchini. Lastly, serve dish with the other two slices of zucchini on top (like a sandwich).
